Barbadian-Style Chicken Wings
Ingredients
- Nonstick aluminum foil
- 3 lb chicken wings (or drumettes)
- Olive oil cooking spray
- 2 teaspoons sazón tropical (or total) seasoning
- ½ cup Buffalo wing sauce
- ½ cup mango (or peach) jam
- 2 teaspoons Pickapeppa (or Worcestershire) sauce
- 1 lime, for juice
Steps
- Preheat oven to 450°F. Line large baking sheet with foil. Arrange wings on sheet, coat with spray, and sprinkle with seasoning (wash hands). Place in oven on middle rack and bake 10–12 minutes, flipping wings halfway through cook time, until 165°F. Remove from oven and increase heat to broil on HIGH.
- Combine sazón, wing sauce, jam, and Pickapeppa sauce; reserve one-third mixture for final coating. Brush wings with one-half remaining sauce; broil 3–4 minutes.
- Flip wings and brush with other half sauce; broil 3–4 more minutes until browned.
- Coat wings with reserved sauce. Squeeze lime juice over wings and serve.
Roasted Tropical Potatoes
Ingredients
- 1 (28 oz) bag baby potatoes
- 1 (8 oz) bag mini sweet peppers
- 1 medium yellow onion
- 6 cloves garlic
- 1 (6 oz) can pineapple juice
- 1 tablespoon canola oil
- 2 teaspoons sazón tropical (or complete) seasoning
Steps
- Preheat oven to 450°F. Halve potatoes; slice peppers. Chop onion and garlic.
- Combine all ingredients; place in 13- x 9-inch baking dish. Bake on middle rack 30 minutes, stirring often. Move to top rack and bake 15–20 more minutes until potatoes are tender. Serve.

- Baking, then broiling, the wings helps to reduce cook time and creates brown, crispy chicken.
