Ingredients
- 4 slices turkey bacon
- 4 pita pockets (or hamburger buns)
- 1 large tomato
- 2 (8 oz) packages frozen plant-based burger patties
- ¼ cup stone-ground mustard
- ¼ cup mayonnaise
- ½ cup chunky guacamole, divided
- 4 romaine lettuce leaves
Steps
- Preheat grill (or grill pan) on medium-high. Cook bacon following package instructions. Cut one-third from tops of pitas; discard or reserve for another use.
- Slice tomato. Place pitas on grill and cook 1–2 minutes on each side until toasted, if desired, keep warm. Grill burgers following package instructions.
- Combine mustard and mayonnaise. Spread 2 tablespoons each mayonnaise mixture and guacamole on inside of each pita. Place tomatoes, lettuce, and bacon on top of each burger and add to pitas. Serve.
