Brownie Pie with Coconut Marshmallow Frosting

Ingredients

  • ½ cup unsalted butter
  • 1 (4-oz) bar unsweetened chocolate
  • ¾ cup sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs (or ¾ cup egg substitute)
  • ½ cup flour
  • ¾ cup shredded sweetened coconut, divided
  • 1 (6-oz) graham cracker piecrust
  • 14 large marshmallows, halved

Steps

    1. Preheat oven to 350°F. Place butter and chocolate in microwave-safe bowl; microwave on HIGH 1–2 minutes, stirring halfway, or until chocolate is melted. Stir until mixture is smooth.
    2. Stir in sugar and vanilla until blended. Stir in eggs, one at a time, or until well blended.
    3. Stir in flour and ½ cup coconut just until batter comes together; pour into piecrust. Bake 25–30 minutes or until center is set. Cool on a wire rack.
    4. Preheat oven to broil just before serving. Cut marshmallows in half lengthwise and place on pie with the cut-side down; sprinkle with remaining ¼ cup coconut. Broil pie on middle rack for 1 minute or until topping is golden. Serve while marshmallows are warm.
