BLT Deviled Eggs

Ingredients

  • 12 hard-boiled eggs
  • ⅓ cup Caesar dressing
  • Quart-size zip-top (or pastry) bag
  • ½ cup baby arugula leaves
  • ½ cup diced tomatoes
  • ½ cup cooked bacon pieces

Steps

    1. Cut eggs in half lengthwise. Remove yolks carefully and place in small bowl. Mash yolks with a fork; stir in dressing until well blended. Transfer mixture to bag. Seal bag, then cut off 1 corner and fill each egg.
    2. Dice arugula. Top each egg with even amounts tomatoes, bacon, and arugula. Serve.
    Note: Add 1 teaspoon sriracha or taco seasoning to the egg yolk mixture for a fun, spicy twist.
