Ingredients

  • 3 lb mussels
  • 1 tablespoon extra-virgin olive oil
  • 1 cup trinity mix (diced fresh onions, bell peppers, and celery)
  • 1 teaspoon seafood seasoning
  • 2 cups tomato and clam juice
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon hot pepper sauce

Steps

    1. Rinse mussels well (wash hands). Preheat large sauté pan on medium-high. Place oil and trinity mix in pan; cook 2 minutes until tender. Stir in seasoning and add mussels.
    2. Combine juice, Worcestershire sauce, and pepper sauce; add to pan. Cover and cook 6–8 minutes until mussels open. Discard any mussels that do not open; serve.
Other Preparation Methods
    • Bake: Preheat oven to 400°F. Combine in large bowl: 1 ½ lb mussels, 2 tablespoons garlic-herb butter, 1 teaspoon minced garlic, ¾ cup marsala wine, ½ teaspoon kosher salt, and ½ teaspoon pepper. Transfer to baking dish (wash hands); bake 12–14 minutes until mussels open.
    • Grill: Preheat grill on medium-high. Arrange 1 ½ lb mussels on large sheet of foil (wash hands). Top with 1 tablespoon lemon-herb butter, ¼ cup orange juice, and 2 sprigs thyme. Seal foil pouch and grill 14–16 minutes until mussels open.
