Ingredients
- 8 oz Bakery baguette
- 2 medium blood (or navel) oranges
- ½ small red onion
- 2 tablespoons fresh Italian parsley
- ½ teaspoon fresh ginger
- 1 tablespoon olive oil
- 2 teaspoons champagne (or white wine) vinegar
- ¼ teaspoon kosher salt
Steps
- Preheat oven to 375°F. Slice baguette; arrange slices in single layer on baking sheet. Bake 8–10 minutes or until toasted.
- Meanwhile, peel oranges, separate into segments, and coarsely chop. Finely chop onion (2 tablespoons) and parsley; finely grate ginger.
- Add to medium bowl: oranges, onion, parsley, ginger, oil, vinegar, and salt; gently toss to combine. Spread orange mixture evenly over baguette slices. Serve.
