Blood Orange Relish Crostini

Ingredients

  • 8 oz Bakery baguette
  • 2 medium blood (or navel) oranges
  • ½ small red onion
  • 2 tablespoons fresh Italian parsley
  • ½ teaspoon fresh ginger
  • 1 tablespoon olive oil
  • 2 teaspoons champagne (or white wine) vinegar
  • ¼ teaspoon kosher salt

Steps

    1. Preheat oven to 375°F. Slice baguette; arrange slices in single layer on baking sheet. Bake 8–10 minutes or until toasted.
    2. Meanwhile, peel oranges, separate into segments, and coarsely chop. Finely chop onion (2 tablespoons) and parsley; finely grate ginger.
    3. Add to medium bowl: oranges, onion, parsley, ginger, oil, vinegar, and salt; gently toss to combine. Spread orange mixture evenly over baguette slices. Serve.
