Blended Yogurt and Fresh Fruit Bowl

Ingredients

  • 2 small bananas
  • 1 tablespoon maple syrup
  • 2 tablespoons chia seeds, divided
  • 1 tablespoon creamy almond butter
  • 1 cup low-fat vanilla (or plain) Greek yogurt
  • ½ cup unsweetened almondmilk
  • 2 cups frozen mixed berries
  • 2 cups kiwi pineapple fruit salad (strawberries, blackberries, kiwifruit, and pineapple chunks), divided
  • 4 tablespoons pomegranate arils, divided
  • 1 cup dried coconut chips (or flakes), divided

Steps

    1. Peel bananas and cut into chunks. Place bananas, maple syrup, 1 tablespoon chia seeds, almond butter, yogurt, almondmilk, and frozen fruit in food processor bowl (or blender); process until smooth.
    2. Transfer mixture to servings bowls; top with fresh fruit, pomegranate arils, coconut, and remaining 1 tablespoon chia seeds . Serve.
    Note: For more crunch, add pepitas, pistachios, or sliced almonds to your bowl.
