Birria-Style Beef Dip Tacos

Ingredients

  • 1 ½ lb beef round chunks
  • 1 tablespoon sazón with achiote seasoning
  • 1 (19 oz) can red enchilada sauce
  • 8 oz trinity mix (diced fresh onions, bell peppers, and celery)
  • ¾ cup water
  • 10 (6-inch) flour tortillas
  • 1 ¼ cups shredded Monterey Jack cheese
  • 3 tablespoons unsalted butter

Steps

    1. Place beef, seasoning, enchilada sauce, trinity mix, and water in multicooker. Seal following manufacturer's instructions. Cook on HIGH 50 minutes or until beef is 185°F (for shreddable), then let pressure release naturally 10 minutes. Release remaining pressure carefully and strain (reserve liquid and keep warm); shred beef.
    2. Place ¼ cup beef on each tortilla. Top each with 2 tablespoons cheese and fold tortillas closed.
    3. Preheat large, nonstick sauté pan on medium 2–3 minutes. Melt 1 ½ tablespoons butter in pan; add tacos (in batches). Cook 2–3 minutes on each side until toasted and crisp. Repeat with remaining butter and tacos. Serve with warm cooking liquid for dipping.
    Chef's Tip: Step 1 can be done in a slow cooker. Cook on HIGH 4–5 hours (or LOW 7–8 hours) until beef is 185°F (for shreddable).
Other Preparation Methods

    • Grill: Preheat grill (or grill pan) on medium. Slice 1 ½ lb beef round chunks thinly. Toss with 1 teaspoon cumin, 1 tablespoon Greek seasoning, and ¼ cup lemon vinaigrette. Thread beef onto 4 (12-inch) wooden skewers (wash hands); place skewers on grill and cook 8 minutes, turning occasionally, or until beef is charred and 145°F.
    • Slow cooker: Preheat large sauté pan on medium-high 2–3 minutes. Season 1 ½ lb beef round chunks with 2 teaspoons kosher salt, then coat with 3 tablespoons all-purpose flour (wash hands). Melt 3 tablespoons unsalted butter in pan; add beef and cook 2 minutes, stirring occasionally, or until browned. Place beef in slow cooker with 16 oz beef stock and 8 oz each sliced fresh mushrooms and trinity mix. Cook on HIGH 4 hours or until beef is tender and 145°F.
