Berry Slab Pie

Ingredients
- 1 sheet GreenWise frozen puff pastry
- Nonstick aluminum foil
- 1 orange, for zest
- ¼ cup GreenWise cane sugar
- 3 tablespoons cornstarch
- 2 teaspoons ginger stir-in paste
- 1 ½ cups fresh blackberries
- 1 ½ cups fresh blueberries
- GreenWise all-purpose flour, for dusting
- ¼ cup liquid egg whites
- Coarse sugar (optional)
- 1 quart GreenWise vanilla ice cream
Steps
- Thaw puff pastry. Preheat oven to 400°F. Line baking sheet with foil. Zest orange (2 teaspoons). Combine cane sugar, cornstarch, orange zest, and ginger in large bowl. Halve any large berries; add all berries to sugar mixture and toss gently to coat.
- Flour work surface lightly, then roll puff pastry into 15- x 12-inch rectangle; transfer to baking sheet with long side facing you. Spoon berry mixture onto left half of puff pastry in single layer, leaving 1-inch border around outside edges.
- Brush egg white on uncovered edges of pastry. Fold right half of pastry over fruit, like closing a book; press and pinch edges to seal. Brush top of pastry with remaining egg white; sprinkle with coarse sugar, if using. Cut 3 slits in pastry top to vent.
- Bake 25–30 minutes until pastry is golden and filling is bubbly. Let stand 30 minutes before slicing. Serve with ice cream.
