Ingredients
- 2 cups fresh strawberries
- 1 teaspoon fresh mint
- 12 vanilla wafer cookies
- 2 tablespoons agave nectar (or honey)
- 1 tablespoon balsamic vinegar
- 1 cup fresh blueberries (or raspberries)
- ½ cup part-skim ricotta cheese
- ½ cup low-fat vanilla Greek yogurt
Steps
- Hull and slice strawberries. Chop mint finely; crush cookies. Combine agave and vinegar in medium bowl until blended; add strawberries and blueberries and toss to coat. Let stand 10 minutes, stirring occasionally.
- Combine cheese and yogurt until blended; chill 5 minutes.
- Stir mint into berries. Place 1 tablespoon cheese mixture in bottoms of 4 parfait glasses. Divide one-half cookie crumbs evenly among glasses, then one-half berry mixture. Repeat cookie and berry layers; top with remaining cheese mixture. Serve.
