Berry-Orange Crostini

Ingredients

  • 1 Publix Bakery baguette
  • 3 tablespoons olive oil
  • ½ teaspoon kosher salt
  • ½ teaspoon pepper
  • 1 orange
  • 4 oz mascarpone cheese, softened
  • 4 large strawberries, sliced
  • 16 blackberries (or raspberries and blueberries)
  • 1 (0.75-oz) package fresh mint, finely chopped

Steps

    1. Preheat oven to 350°F. Slice bread diagonally into 8 (½-inch-thick) slices. Coat both sides of bread with olive oil and place on baking sheet; season with salt and pepper. Bake 5–6 minutes or until toasted. Let stand 2 minutes to cool.
    2. Zest orange peel (1 teaspoon). Remove remaining peel and cut orange into segments.
    3. Spread 1 tablespoon mascarpone cheese on each baguette slice. Layer with sliced strawberries, blackberries, and orange segments; sprinkle with orange zest and mint.
Other Preparation Methods
    • Bake: Brush baguette slices with butter and maple syrup. Top with slice of Brie; bake 5–7 minutes or until bread is toasted and cheese melts.
    • Grill: Halve bread lengthwise; brush with olive oil. Grill 1–2 minutes or until grilled-marked. Rub a garlic clove over grill marks.
