Berry-Banana Smoothie Bowl

Ingredients

  • 2 small bananas
  • 1 tablespoon maple syrup
  • 2 tablespoons chia seeds, divided
  • 1 tablespoon creamy almond butter
  • 1 cup low-fat vanilla (or plain) Greek yogurt
  • ½ cup unsweetened almondmilk
  • 2 cups frozen mixed berries
  • 2 cups mixed fresh fruit (such as strawberries, blackberries, kiwifruit, and pineapple chunks), divided
  • ¼ cup pomegranate arils, divided
  • 1 cup dried coconut chips (or flakes), divided

Steps

    1. Peel bananass and cut into chunks. Place bananas, maple syrup, 1 tablespoon chia seeds, almond butter, yogurt, almondmilk, and frozen berries in food processor bowl (or blender); process until smooth.
    2. Divide berry-banana mixture evenly among servings bowls; top evenly with fresh fruit, remaining 1 tablespoon chia seeds, pomegranate arils, and coconut. Serve.
    Note: For added crunch, add sliced almonds, pistachios, or pepita seeds to your bowl.
