Beet Feta Salad

Ingredients

  • 3 medium beets
  • 1 tablespoon olive oil
  • ¼ teaspoon kosher salt
  • ¼ teaspoon pepper
  • ½ cup green onions, chopped
  • ½ cup crumbled feta cheese

Steps

    1. Preheat oven to 400°F; peel beets and cut into ½-inch-thick slices. Place on foil-lined baking sheet and brush beet slices with olive oil; sprinkle with salt and pepper. Bake 25–30 minutes or until tender.
    2. Transfer to serving bowl; top with green onions and feta cheese. Serve.
Other Preparation Methods
    • Steam: Peel 3–4 beets; cut into ½-inch-thick slices. Place beets in steamer basket over ½ cup boiling water; steam 5–6 minutes or until tender. Drain and serve warm with butter.
    • Sauté: For a beet hash, grate 1 cup each peeled beets and sweet potatoes. Preheat 2 tablespoons oil in sauté pan on medium 2–3 minutes. Add beets, sweet potatoes, and ¼ cup finely chopped onion to pan; cook 6–8 minutes or until slightly browned.
