Beefy Five-Bean Soup in a Jar

Ingredients
For gift jar
  • ⅓ cup dry pinto beans
  • ⅓ cup dry split green peas
  • 2 packets salt-free beef bouillon powder
  • 1 teaspoon dry mustard
  • 1 teaspoon smoked paprika
  • 1 tablespoon dry minced onions
  • 1 tablespoon dry minced garlic
  • 1 bay leaf
  • 1 teaspoon crushed rosemary
  • ⅓ cup dry black beans
  • ⅓ cup dry great northern beans
  • ⅓ cup dry kidney beans
  • ¾ teaspoon kosher salt
  • 1 (1-pint) mason jar with lid
For cooking
  • 12 oz lean ground beef, 7% fat
  • 6 cups water
  • 1 (14.5 oz) can no-salt-added diced tomatoes
Steps
  1. Assemble gift jar. Layer all ingredients in jar in order listed. Place lid tightly on jar and give as gift with cooking instructions.
Cooking instructions
  1. Preheat large stockpot on medium-high 2–3 minutes. Place ground beef in pot; brown meat 5–7 minutes, stirring to crumble, until no pink remains and beef is 160°F. Add water, tomatoes, and contents of jar to beef; cover and bring to a boil.

  2. Boil 2 minutes, then reduce to a simmer; cook uncovered 1–1 ½ hours, stirring occasionally, until beans are tender and soup is thick. Remove and discard bay leaf; serve.
