Beef Fajitas with Peppers and Onions

Ingredients
  • 1 ½ lb top sirloin for stir-fry
  • 2 tablespoons fajita seasoning
  • 1 tablespoon canola oil
  • 32 oz sliced fresh peppers and onions
  • 8 small flour tortillas
  • 1 lime, for juice
Steps
  1. Combine sirloin and seasoning in medium bowl until well blended. Preheat oil in large sauté pan on medium-high 2–3 minutes.
  2. Add peppers and onions to pan; cook and stir 2–3 minutes until vegetables begin to soften. Stir in beef; cook 4–6 minutes until beef is browned and 145°F. Warm tortillas, if desired. Squeeze lime juice over beef and vegetables; serve with tortillas.
