Beef Fajitas with Peppers and Onions

Ingredients

  • 1 ½ lb top sirloin for stir-fry
  • 2 tablespoons fajita seasoning
  • 1 tablespoon canola oil
  • 30 oz sliced fresh peppers and onions
  • 8 small flour tortillas
  • 1 lime, for juice

Steps

    1. Combine beef and seasoning in medium bowl until evenly coated. Preheat oil in large sauté pan on medium-high 2–3 minutes.
    2. Add peppers and onions to pan; cook and stir 2–3 minutes until vegetables begin to soften. Stir in beef; cook 4–6 minutes until beef is browned and 145°F. Warm tortillas if desired. Squeeze lime juice over beef and vegetables; serve with tortillas.

The doneness temperatures for medium rare and medium stated above are traditional temperatures used for cooking steak, but are not recommended by the USDA. To maintain food safety, the USDA recommends an internal temperature of 145°F, as measured using a food thermometer, with a 3-minute rest time before carving.
