Ingredients

  • 2 limes, for juice
  • 1 lb cooked beef roast (or cooked beef short ribs)
  • 1 tablespoon jalapeño hot sauce
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • ½ bunch fresh cilantro
  • ½ cup queso fresco
  • 8 small corn tortillas
  • 8 oz diced fresh red onions
  • Salsa (optional, for serving)
  • Guacamole (optional, for serving)

Steps

    1. Juice limes (2 tablespoons). Shred beef and place in large, microwave-safe dish. Add lime juice, hot sauce, cumin, and oregano; toss until blended. Cover and cook on HIGH 3–4 minutes, stirring occasionally, until 165°F.
    2. Chop cilantro and crumble queso fresco. Divide beef among tortillas; top with onions, cilantro, and queso fresco. Serve with salsa and guacamole, if using.
