Ingredients
- 2 limes, for juice
- 1 lb cooked beef short ribs (or cooked beef roast)
- 1 tablespoon green jalapeño pepper sauce
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano leaves
- ½ cup fresh cilantro, coarsely chopped
- ½ cup queso fresco, crumbled
- 8 small corn tortillas
- 8 oz fresh prediced red onions
- Salsa (optional)
- Guacamole (optional)
Steps
- Squeeze limes for juice (2 tablespoons). Shred beef. Place in a large microwave-safe dish and add hot sauce, lime juice, cumin, and oregano; toss until blended. Cover and cook on HIGH for 3–4 minutes, stirring occasionally, or until hot and 165°F.
- Chop cilantro and crumble cheese. Assemble tortillas by placing equal amounts beef in center of each tortilla; top with onions, cilantro, and cheese. Serve with salsa and guacamole, if desired.
