Ingredients
- 2 limes, for juice
- 1 lb cooked beef roast (or cooked beef short ribs)
- 1 tablespoon jalapeño hot sauce
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- ½ bunch fresh cilantro
- ½ cup queso fresco
- 8 small corn tortillas
- 8 oz diced fresh red onions
- Salsa (optional, for serving)
- Guacamole (optional, for serving)
Steps
- Juice limes (2 tablespoons). Shred beef and place in large, microwave-safe dish. Add lime juice, hot sauce, cumin, and oregano; toss until blended. Cover and cook on HIGH 3–4 minutes, stirring occasionally, until 165°F.
- Chop cilantro and crumble queso fresco. Divide beef among tortillas; top with onions, cilantro, and queso fresco. Serve with salsa and guacamole, if using.
