    Ingredients

    • 2 limes, for juice
    • 1 lb cooked beef short ribs (or cooked beef roast)
    • 1 tablespoon green jalapeño pepper sauce
    • 1 teaspoon ground cumin
    • 1 teaspoon dried oregano leaves
    • ½ cup fresh cilantro, coarsely chopped
    • ½ cup queso fresco, crumbled
    • 8 small corn tortillas
    • 8 oz fresh prediced red onions
    • Salsa (optional)
    • Guacamole (optional)

    Steps

      1. Squeeze limes for juice (2 tablespoons). Shred beef. Place in a large microwave-safe dish and add hot sauce, lime juice, cumin, and oregano; toss until blended. Cover and cook on HIGH for 3–4 minutes, stirring occasionally, or until hot and 165°F.
      2. Chop cilantro and crumble cheese. Assemble tortillas by placing equal amounts beef in center of each tortilla; top with onions, cilantro, and cheese. Serve with salsa and guacamole, if desired.
