Barbecue Chicken Flatbread with Gouda

Ingredients

  • 1 chilled Deli oven-roasted chicken
  • ½ bunch fresh cilantro
  • 1 ½ cups hickory barbecue sauce
  • 5 oz Gouda cheese
  • 1 small red onion
  • 1 (12-inch) thin and crispy pizza crust

Steps

    1. Preheat oven to 425°F. Shred chicken (breast meat only; 2 cups); chop cilantro coarsely (½ cup). Combine chicken, barbecue sauce, and ¼ cup cilantro in medium bowl.
    2. Grate cheese and slice onion thinly. Spread chicken mixture over pizza crust; sprinkle with cheese and onions. Bake 8–10 minutes until cheese is melted and crust has browned. Top with remaining ¼ cup cilantro; serve.
Other Preparation Methods
    • Pasta: Cook 8 oz penne pasta following package instructions. Combine in medium saucepan: 1 (15 oz) jar roasted-garlic Alfredo sauce and 2 cups each shredded Gouda and shredded smoked pork; bring to a simmer over medium heat. Stir in pasta.
    • Bake: Preheat oven to 400°F. Cut corn muffins into ½-inch-thick disks; brush with butter and bake 6–8 minutes until crisp. Place 1 slice Gouda on each disk; bake 1–2 more minutes until cheese is melted.
