Barbecue Beef Kabobs

Ingredients

  • 1 small red onion
  • 1 medium red bell pepper
  • 2 (1-inch-thick) boneless grilling steaks (such as New York strip, ribeye, or sirloin; about 1 ½ lb)
  • 1 teaspoon kosher salt
  • 4 (12-inch) wooden skewers
  • ½ cup hickory (or regular) barbecue sauce
  • ¼ cup cola
  • ¼ cup sweet chili sauce

Steps

    1. Preheat grill (or grill pan) on medium-high. Cut onion and pepper into 1-inch pieces. Cut steak into 1-inch cubes; season with salt. Alternate onions, peppers, and beef on skewers (wash hands).
    2. Combine barbecue sauce, cola, and sweet chili sauce.
    3. Place skewers on grill; cook 7–10 minutes, turning occasionally, until steak is 125°F (for medium rare; warm red center), 130°F (for medium; warm pink center), or up to 170°F (for well done). Baste with sauce during last 2 minutes of cook time; serve with remaining sauce on the side.
    Note: The doneness temperatures for medium rare and medium stated above are traditional temperatures used for cooking steak, but are not recommended by the USDA. To maintain food safety, the USDA recommends an internal temperature of 145°F, as measured using a food thermometer, with a 3-minute rest time before carving.
