    • Cooking spray
    • 8 pitted dates, coarsely chopped and divided
    • 2 large bananas, coarsely chopped
    • ¼ cup unsweetened shredded coconut
    • 1 scoop vanilla protein powder
    • ½ teaspoon kosher salt
    • ½ cup old fashioned oats, divided

    Steps

      1. Preheat oven to 350°F. Coat baking sheet with spray; chop dates and bananas.
      2. Place in food processor bowl: bananas, coconut, protein powder, salt, ¼ cup oats, and one-half of dates. Process until combined and smooth. Then pulse in remaining ¼ cup oats and dates until combined.
      3. Scoop (or spoon) dough into 3 tablespoon piles onto baking sheet. Bake 8–12 minutes or until centers are set and edges are slightly golden. Let stand to cool on pan 3 minutes before removing. Serve. (Makes about 12 cookies.)
