Ingredients
- Cooking spray
- 8 pitted dates, coarsely chopped and divided
- 2 large bananas, coarsely chopped
- ¼ cup unsweetened shredded coconut
- 1 scoop vanilla protein powder
- ½ teaspoon kosher salt
- ½ cup old fashioned oats, divided
Steps
- Preheat oven to 350°F. Coat baking sheet with spray; chop dates and bananas.
- Place in food processor bowl: bananas, coconut, protein powder, salt, ¼ cup oats, and one-half of dates. Process until combined and smooth. Then pulse in remaining ¼ cup oats and dates until combined.
- Scoop (or spoon) dough into 3 tablespoon piles onto baking sheet. Bake 8–12 minutes or until centers are set and edges are slightly golden. Let stand to cool on pan 3 minutes before removing. Serve. (Makes about 12 cookies.)
