Baked Sweet Potato Wedges

Ingredients

  • 6 teaspoons olive oil, divided
  • 4 sweet potatoes (about 1 lb)
  • ¼ teaspoon paprika
  • ¼ teaspoon salt

Steps

    1. Preheat oven to 400°F. Brush baking sheet with 1 teaspoon olive oil. Peel potatoes and slice lengthwise into quarters.
    2. Combine remaining 5 teaspoons olive oil and paprika in large bowl. Add potato wedges and stir to coat; place on baking sheet.
    3. Bake 35–40 minutes, turning once halfway through bake time, or until tender. Sprinkle with salt.
Other Preparation Methods
    • Microwave: Peel 1 lb sweet potatoes, cut into 2-inch pieces, and place in microwave-safe bowl with 2 tablespoons water. Microwave on HIGH 7–8 minutes or until tender.
    • Grill: Cut 1 lb sweet potatoes into ¼-inch-thick slices and brush with oil. Grill over indirect heat 4–5 minutes on each side or until tender.
