Ingredients
  • 2 lb boneless, skinless chicken thighs
  • 1 (11.4 oz) package hard and soft shell taco kit
  • 1 Hass avocado
  • 1 lime, for wedges
  • 1 (8 oz) can pineapple tidbits
  • ½ cup canned diced tomatoes
  • ½ cup sour cream
  • ½ cup fresh salsa
Steps
  1. Preheat grill pan (or grill) on medium-high 2–3 minutes. Season chicken with taco seasoning (from kit); wash hands. Place chicken in pan and cook 4–5 minutes on each side until 165°F.
  2. Heat taco shells and tortillas following package instructions. Halve avocado, remove pit and flesh, and slice flesh thinly; cut lime into wedges. Drain pineapple and tomatoes.
  3. Cut chicken into small pieces; combine with pineapples. Fill taco shells and tortillas evenly with chicken, avocados, and remaining ingredients (including sauce from kit). Serve with lime wedges.
