Bacon-Wrapped Shrimp and Orange Spinach Salad

  • Prepare shrimp and begin to grill (10 minutes)

Bacon-Wrapped Shrimp

Ingredients

  • 24 large peeled/deveined shrimp (about ¾ lb)
  • Cooking spray
  • 8 slices cooked bacon
  • 24 toothpicks
  • ½ cup creamy poppy seed dressing

Steps

    1. Set shrimp out to thaw, if needed. Coat grill rack with cooking spray, then preheat grill (or grill pan) on medium.
    2. Stack bacon slices and cut into thirds. Wrap each shrimp with 1 piece bacon and secure with toothpick, then place in medium bowl (wash hands). Pour dressing over shrimp and stir to coat; let stand 5 minutes to marinate.
    3. Place shrimp on grill using tongs; discard any remaining dressing. Close lid (or cover with foil) and cook 6–8 minutes, turning occasionally, just until shrimp are pink. Remove toothpicks and serve.

Orange Spinach Salad

Ingredients

  • 1 (15 oz) can mandarin oranges in light syrup
  • ¼ cup creamy poppy seed dressing
  • 1 tablespoon white balsamic vinegar
  • 5 oz fresh baby spinach
  • ¼ cup shelled sunflower seeds

Steps

    1. Drain oranges. Whisk dressing and vinegar in salad bowl until well blended.
    2. Add oranges, spinach, and sunflower seeds; toss until evenly coated. Serve

  • Complete your meal with grape tomatoes, Italian bread, lemonade, and peach pie for dessert.
