Ingredients
- 3 tablespoons fresh cilantro, coarsely chopped
- 1 medium onion
- 1 (8.8-oz) pouch precooked white rice
- 1 (15-oz) can pink beans in sauce
- 4 sirloin tip sandwich steaks (¾ lb)
- 1 tablespoon garlic/herb seasoning
- 4 slices bacon
Prep
- Preheat oven to 425°F.
- Chop cilantro.
- Cut ¼ of the onion into strips; chop remaining onion coarsely.
Steps
- Place rice in 9-inch-square baking dish. Stir in pink beans (with sauce) and chopped onions.
- Arrange steaks on cutting board; sprinkle with seasoning. Place ¼ of the onion strips and 1 teaspoon cilantro on each steak. Roll steak around onions; wrap each steak with a slice of bacon.
- Place steak rolls on top of rice and beans; bake 25-30 minutes or until bacon is crisp. Sprinkle with remaining cilantro and serve.
