Ingredients
- 1 lemon, for juice
- 1 cup fresh strawberries, quartered
- 2 oz goat cheese, crumbled
- 4 tablespoons olive oil
- 2 tablespoons red wine vinegar
- ¼ teaspoon kosher salt
- ¼ teaspoon pepper
- 1 (6-oz) bag baby spinach
- ¼ cup sliced almonds
Steps
- Squeeze lemon for juice (1 tablespoon). Quarter strawberries; crumble cheese.
- Whisk oil, vinegar, lemon juice, salt, and pepper until blended. Toss spinach and strawberries with dressing; top with goat cheese and almonds. Serve.
