Baby Spinach and Strawberry-Almond Salad

Ingredients

  • 1 lemon, for juice
  • 1 cup fresh strawberries, quartered
  • 2 oz goat cheese, crumbled
  • 4 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • ¼ teaspoon kosher salt
  • ¼ teaspoon pepper
  • 1 (6-oz) bag baby spinach
  • ¼ cup sliced almonds

Steps

    1. Squeeze lemon for juice (1 tablespoon). Quarter strawberries; crumble cheese.
    2. Whisk oil, vinegar, lemon juice, salt, and pepper until blended. Toss spinach and strawberries with dressing; top with goat cheese and almonds. Serve.
