Avocado-Lime Chicken Pasta

Ingredients

  • 1 cup grape tomatoes
  • ½ cucumber
  • 2 limes, for zest/juice
  • 1 Deli chilled oven-roasted chicken
  • 8 oz medium shell pasta
  • 1 Hass avocado
  • ½ bunch fresh cilantro
  • 3 tablespoons light mayonnaise (or plain Greek yogurt)
  • 1 teaspoon garlic stir-in paste

Steps

    1. Bring water to a boil for pasta. Halve tomatoes. Cut cucumber in half lengthwise; slice thinly (½ cup). Zest limes (1 teaspoon), then juice (2 tablespoons). Shred chicken (breast meat only; about 2 cups).
    2. Cook pasta following package instructions, then drain and chill until cool.
    3. Halve avocado, scoop out flesh, and chop coarsely. Place avocado, cilantro, lime zest and juice, mayonnaise, and garlic paste in food processor bowl; process until creamy.
    4. Combine chilled pasta, avocado sauce, tomatoes, cucumber, and chicken; serve.
