Avocado Caprese Crostini

Ingredients

  • 8 oz Bakery baguette
  • 3 tablespoons extra-virgin olive oil
  • 3 ripe Hass avocados, thinly sliced
  • 1 pint grape tomatoes, halved
  • 8 oz fresh mozzarella pearls
  • ⅔ cup fresh basil leaves
  • ½ teaspoon kosher salt
  • ½ teaspoon pepper

Steps

    1. Preheat oven to 375°F. Slice bread into ½-inch-thick slices, then arrange on baking sheet; toss with oil. Bake 8–10 minutes or until golden and crisp. Remove bread from oven; change oven setting to broil (on low).
    2. Peel, pit, and slice avocado; halve tomatoes. Top bread slices with even amounts basil leaves, avocado, tomatoes, and mozzarella; broil on top rack 2–3 minutes or until cheese has melted slightly. Sprinkle with salt and pepper. Serve.
