Arctic Char with Orange Hollandaise

Ingredients

  • 1 cup milk
  • 1 (0.9-oz) packet hollandaise sauce mix
  • 4 tablespoons unsalted butter
  • Zest of 1 orange (1 teaspoon)
  • ½ teaspoon chipotle pepper sauce
  • ½ teaspoon kosher salt
  • 2 tablespoons canola oil
  • 2 Arctic char fillets (1–1 ¼ lb), skin removed

Steps

    1. Whisk milk and sauce mix in microwave-safe bowl until smooth. Add butter; microwave on HIGH for 4–5 minutes, stirring often, or until sauce thickens. Stir in zest and pepper sauce.
    2. Preheat large sauté pan on medium-high 2–3 minutes. Season fish with salt. Place oil in pan, then add fish; cook 3–4 minutes on each side or until opaque and separates easily. Serve with sauce.
    Always check fish for bones and cook to an internal temperature of 145°F.
Other Preparation Methods
    • Broil: Preheat broiler. Place 2 Arctic char fillets on nonstick foil-lined baking sheet; place pan 6 inches from broiler. Broil 4–5 minutes or until opaque and separates easily. Spread 2 tablespoons prepared basil pesto evenly over top of fish.
    • Bake: Preheat oven to 425°F. Place 2 Arctic char fillets in baking dish; spread 2 tablespoons teriyaki sauce evenly over top of fish. Bake 10–12 minutes or until opaque and separates easily.
