Steps
  1. Preheat large, nonstick sauté pan on medium-high 2–3 minutes. Remove pan from heat and coat with cooking spray. Return pan to heat and place chicken in pan; cook 5–6 minutes on each side and until 165°F. Remove chicken from pan; let stand 5 minutes to rest.
  2. Combine in medium microwave-safe bowl: rice, squash and zucchini, asparagus, and apricots; stir to combine. Add ½ tablespoon butter, then cover with plastic wrap and microwave on HIGH for 3 minutes. Let rice stand in microwave until chicken is complete.
  3. Return sauté pan to low heat; pour sauce in pan. Cut chicken into bite-size pieces and add to sauce. Cook and stir 1–2 minutes or until chicken is coated with sauce and heated through.
  4. Serve chicken over vegetables and rice; top with almonds.
