Apple Spice Mug Muffins

Ingredients

  • 1 small Gala apple
  • 1 cup whole wheat flour (or all-purpose baking mix)
  • ½ cup egg substitute (or 2 large eggs)
  • 1 (4 oz) cup cinnamon applesauce
  • 1 (5.3 oz) container low-fat vanilla cinnamon Greek yogurt
  • ½ cup unsweetened nondairy milk
  • 1 teaspoon ginger spice paste
  • 4 tablespoons pure maple syrup (optional)

Steps

    1. Peel apple (if desired) and chop into small cubes (8 tablespoons). Whisk flour, egg substitute, applesauce, yogurt, milk, and ginger paste until just combined. Divide batter among 4 (12 oz) ceramic mugs; top each with 2 tablespoons apple cubes.
    2. Microwave each mug individually on HIGH 1–1 ½ minutes until center is set and muffin pulls slightly away from sides of mug (microwave ovens may vary). Let stand to cool 1 minute before serving. Drizzle each with 1 tablespoon maple syrup, if using; serve.
    Caution: Mugs will be hot; touch only by handles.
Other Preparation Methods
    • Baking: Preheat oven to 350°F. Coat 24 cup mini muffin pan with spray. Fill each cup ¾ full; top with apples. Bake 8–10 minutes or until set. Let stand 10 minutes and drizzle with maple syrup before serving.
