Apple Pie Pancakes with Turkey Bacon

Ingredients
  • 4 oz uncured turkey bacon
  • 1 large Gala apple
  • ½ cup agave nectar
  • 2 teaspoons apple pie spice (or ground cinnamon), divided
  • ⅔ cup old-fashioned oats
  • ½ cup unsweetened applesauce
  • 1 (5.3 oz) container vanilla cinnamon Greek yogurt (about ⅔ cup)
  • ½ cup liquid egg whites (or egg substitute)
  • 2 teaspoons baking powder
  • Cooking spray
Steps
  1. Cook bacon following package instructions; keep warm until ready to serve. Meanwhile, peel apple, if desired, then cut into small cubes. Place apples, agave nectar, and 1 teaspoon apple pie spice in small saucepan; simmer on low 3–4 minutes, stirring occasionally, until apples are crisp-tender. Remove from heat and cover to keep warm.
  2. Combine oats, applesauce, yogurt, egg whites, baking powder, and remaining 1 teaspoon apple pie spice in blender (or food processor bowl); blend until combined and smooth.
  3. Preheat large, nonstick sauté pan on medium 2–3 minutes, then remove pan from heat and coat with spray. Scoop ⅓ cup batter into pan for each pancake, leaving 1 inch between pancakes; cook 2–3 minutes on each side until golden. Remove from pan and repeat with remaining batter. Top pancakes with sauce; serve with bacon.
