Apple-Almond Galette

Ingredients

  • 1 sheet frozen puff pastry
  • 2 tablespoons salted butter
  • ⅔ cup granulated sugar
  • 1 ½ cups almond flour
  • ¼ teaspoon kosher salt
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract
  • 3 large eggs, divided
  • 4 medium Granny Smith apples
  • 1 lemon, for juice
  • 2 tablespoons all-purpose flour, for dusting
  • 2 teaspoons water
  • 2 tablespoons coarse sugar
  • 3 tablespoons sliced almonds (optional)
  • 1 quart vanilla ice cream, for serving

Steps

    1. Thaw puff pastry; melt butter. Combine in medium bowl: butter, granulated sugar, almond flour, salt, vanilla extract, almond extract, and 2 eggs; stir until blended. Peel and core apples, then slice thinly. Juice lemon (2 tablespoons). Toss apple slices with lemon juice until coated.
    2. Preheat oven to 350°F. Dust work surface with all-purpose flour and roll out puff pastry to 14-inch square. Roll pastry carefully around rolling pin and transfer to 10-inch cast iron skillet (or oven-safe sauté pan). Press pastry gently into bottom and up sides of skillet, letting dough hang over sides.
    3. Spread almond flour mixture evenly in bottom of pastry, then arrange apple slices evenly and decoratively on top. Fold in overhanging pastry dough to form top crust. Crimp as desired and trim away excess dough if needed.
    4. Beat remaining egg with water and brush over top and sides of pastry; sprinkle with coarse sugar and sliced almonds, if using. Bake 35–45 minutes until pastry is golden and apples are tender. Serve warm with ice cream.

    Note: If crust is browning too quickly, cover edges with foil for last 5–10 minutes of baking.
