Almond Flour Chocolate Chip Cookies

Ingredients

  • ½ cup unsalted butter
  • Parchment paper
  • 2 cups almond flour
  • 2 tablespoons coconut flour
  • ½ teaspoon baking soda
  • ½ teaspoon kosher salt
  • ½ cup coconut (or avocado) oil
  • ¼ cup granulated sugar (or sugar substitute)
  • ¼ cup brown sugar (or brown sugar substitute)
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ¼ teaspoon almond extract
  • 1 cup semisweet (or bittersweet) chocolate morsels

Steps

    1. Set butter out to soften. Preheat oven to 350°F. Line 2 baking sheets with parchment paper (or silicone mat). Combine almond flour, coconut flour, salt, and baking soda in medium bowl.
    2. Combine butter and coconut oil in large bowl; beat with electric mixer until smooth. Add granulated sugar, brown sugar, egg, vanilla extract, and almond extract; beat until well blended. Add flour mixture and stir until well blended. Stir in chocolate morsels; let stand 5 minutes.
    3. Scoop (or form) into 1 ½-inch balls (golf ball size); arrange 1 inch apart on prepared baking sheet. Bake 8–10 minutes until edges are golden. Let cookies stand on baking sheets 10 minutes until completely cooled. Serve. (Makes 24 cookies.)
