40-Clove Garlic Chicken with Gnocchi

Ingredients

  • 1 tablespoon fresh rosemary
  • 1 lemon, for zest/juice
  • 3 slices bacon
  • 2 tablespoons all-purpose flour
  • 1 tablespoon salt-free Italian seasoning
  • 1 teaspoon kosher salt
  • ½ teaspoon pepper
  • Large zip-top bag
  • 2 lb boneless, skinless chicken thighs
  • 1 cup garlic cloves
  • 1 (8 oz) package trinity mix (diced fresh onions, bell peppers, and celery)
  • 1 cup unsalted chicken broth (or stock)
  • 1 (16 oz) package gnocchi pasta

Steps

    1. Chop rosemary finely. Zest lemon (1 teaspoon), then juice (2 tablespoons). Cut bacon into ½-inch pieces (wash hands). Combine flour, seasoning, salt, and pepper in bag. Add chicken to bag (wash hands), seal tightly, and shake to coat.
    2. Preheat large, nonstick sauté pan on medium 1–2 minutes. Place bacon in pan; cook 4–5 minutes, stirring occasionally, until crispy. Remove bacon with slotted spoon, leaving drippings in pan.
    3. Add chicken and garlic to same pan; cook 2–3 minutes on each side until browned. Transfer chicken and garlic to slow cooker. Combine rosemary, lemon zest and juice, trinity mix, and broth; pour over chicken.
    4. Cover and cook on HIGH 2 ½ hours (or LOW 4 ½ hours). Stir gnocchi gently into slow cooker; cook 25–30 more minutes until gnocchi are tender and chicken is 165°F. Top with bacon; serve.
