Overnight Soak: Place 1 lb beans (about 2 cups) and 6 cups water in large saucepan. Cover and let stand overnight (or at least 6-8 hours). Drain and rinse beans (discard soak water). Cooking Instructions: Place presoaked beans and 6 cups fresh water in large saucepan; cover and bring to just boiling on medium-high. Reduce heat to low and simmer gently, with lid tilted, about 1-1/2 hours, stirring occasionally, or until tender. (Makes about 6 cups cooked beans.)
