How it Works: When making homemade ice cream, the temperature of the liquid ice cream mixture needs to be lower than 32 degrees F, so that it will freeze. Morton Ice Cream Salt works with crushed ice to create a brine with a melting temperature lower than 32 degrees F. The larger rock salt crystals take more time to dissolve, which allows for gradual cooling of the ice cream. This effectively freezes the mixture to create a delightful ice cream. Tips for Freezing Ice Cream: Follow manufacturer's instructions for assembling ice cream maker. Pour prepared ice cream mixture into ice cream maker's canister and place canister- into machine. Surround canister with several inches of crushed ice followed by Morton Ice Cream Salt using a ratio of 1 part Morton Ice Cream Salt to 8 parts crushed ice. Continue this layering process until the canister is covered. With the dasher inserted into the ice cream maker per the manufacturer's instructions, turn the crank of the hand freezer slowly, then faster as the mixture begins to freeze.
