He tested his creation at the Hellshire Beach, a popular haunt for most Kingston area dwellers. It is said that this fisherman named his discovery Festival because Festival nice, just like Festival. He was right. Festival, served Hellshire style with fried fish has become a delicious and legendary combination. We have captured the essence of this unique recipe. Quick 'n Easy Directions: Combine 1/2 pack (2 & 1/8 cups) or 1 pack (4 & 1/4 cups) Festival Mix with 1/3 to 1/2 or 2/3 to 1 cup water, using hands to knead together; Leave dough in bowl covered with damp cloth for approximately 15 minutes; Turn on to floured surface and portion into 6 (2 & 1/8 cups) or 12 (4 & 1/4 cups) equal pieces; Roll each pie into sausage shape and then flatten; Pre-heat cooking oil for deep frying; Deep fry until golden brown. For lighter Festivals, leave dough properly covered and store in the refrigerator overnight.
