It can be traced to the Coromantee hunters of pre-slavery West Africa, who passed it on to the Maroons. They would roast seasoned pork over hot coals, in earthen pits that were covered with Pimento branches. Boston Beach, an area on northeastern Jamaica, is internationally famous for jerked pork. Recipe for jerking pork, chicken, fish, etc. Clean meat and score. Apply JCS Boston Jerk Dry Seasoning (about 1 tbsp. per pound), one tbsp. soya sauce, JCS Garlic, Scallions and All Spice (1/2 tsp or to taste). Marinate for at least two hours. Baste with margarine and grill or roast until meat is cooked.
