Simplified Beef Mole
Ingredients
- 2 ½ lb boneless chuck roast
- ½ teaspoon kosher salt
- ¼ teaspoon pepper
- 1 tablespoon canola oil
- 1 (16-oz) container fresh salsa
- 1 (10-oz) can enchilada sauce
- ½ cup hot chocolate powder
- 1 ½ teaspoons ground cinnamon
- 1 tablespoon chipotle pepper sauce
Prep
- Cut beef into bite-size pieces.
Steps
- Preheat large sauté pan on medium-high 2–3 minutes. Season beef with salt and pepper (wash hands). Place oil in pan, then add beef (in batches, if needed); cook and stir 1–2 minutes or until well browned.
- Transfer beef and remaining ingredients to slow cooker. Cover and cook on HIGH 1 ½–2 hours (or LOW 2 ½–3 hours) until meat is tender. Serve over rice, if desired.
Beans and Rutabagas
Ingredients
- 2 tablespoons culantro, coarsely chopped
- 1 (16-oz) can reduced-sodium pinto beans, drained
- 1 (14.5-oz) can diced rutabagas, drained
- ½ cup salsa verde
- ½ teaspoon complete (or total) seasoning
Prep
- Chop culantro.
Steps
- Combine all ingredients in medium saucepan on medium.
- Cook and stir 4–5 minutes or until thoroughly heated. Serve.
Serving Suggestions
- Complete your meal with rice, White Mountain bread, and guava pastries for dessert.
- Traditional mole often uses 20 ingredients and requires most of the day to prepare. Our simplified beef mole has only 9 ingredients and can be completed in about 2 hours!
