Mushroom Swiss Burgers with Chopped Cauliflower Salad

  • Preheat grill; prepare burger recipe through step 2 (5 minutes)
  • Prepare salad; begin to grill mushrooms, then burgers (10 minutes)
  • Complete burgers and serve (15 minutes)

Mushroom Swiss Burgers

Ingredients

  • 2 tablespoons reduced-sodium soy sauce
  • 1 tablespoon olive oil
  • ¼ teaspoon kosher salt
  • Large zip-top bag
  • 6 oz whole portabella mushrooms
  • 3 tablespoons dry onion soup mix, divided
  • ¼ cup light mayonnaise
  • 1 ½ lb lean ground beef (7% fat)
  • 8 slices Swiss cheese (about 6 oz)
  • 4 hamburger buns

Steps

    1. Preheat grill (or grill pan) on medium-high. Place soy sauce, oil, and salt; in bag; seal and shake to blend. Discard mushroom stems and gills (dark brown layers); add mushrooms to bag. Seal and shake to coat mushrooms; let stand 10 minutes (or up to 1 hour) to marinate.
    2. Combine 1 tablespoon soup mix with mayonnaise; set aside. Combine beef and remaining 2 tablespoons soup mix until just blended; form into 4 patties (wash hands).
    3. Place mushrooms on grill; grill 3 minutes. Add burgers to grill. Turn mushrooms; grill 3–4 more minutes until tender. Remove mushrooms from grill.
    4. Turn burgers; grill 3–4 more minutes until burgers are 160°F. Cut mushrooms into 8 equal slices. Place 2 mushroom slices and 2 cheese slices on top of each burger during last minute of grill time to melt cheese.
    5. Spread 1 tablespoon mayonnaise mixture on bottom half of each bun. Top with burger and top half of bun. Serve.

Chopped Cauliflower Salad

Ingredients

  • 1 cup frozen green peas
  • 10 oz fresh cauliflower florets
  • ½ oz fresh basil leaves
  • ½ cup roasted cashews
  • ¼ cup plain, nonfat Greek yogurt (or mayonnaise)
  • ¼ cup ginger (or sesame) salad dressing
  • ⅓ cup sliced green onions
  • ¼ teaspoon kosher salt

Steps

    1. Thaw peas in colander under cool running water. Cut cauliflower into ½-inch pieces; chop basil and cashews. Combine yogurt and dressing in salad bowl.
    2. Add remaining ingredients to dressing; toss to coat. Let stand 10 minutes for flavors to blend. Serve.

Serving Suggestions

  • Do not overmix the burgers; this will help keep them tender and moist.
