Savory Shrimp Crostini

Ingredients

  • 12 oz cooked medium shrimp
  • 1 cup mild fresh salsa
  • 8 oz reduced-fat cream cheese
  • 4 oz crumbled goat cheese
  • 1 Bakery baguette (or 24 crispy bagel chips)

Steps

    1. Thaw shrimp, if needed. Drain salsa. Combine cream cheese and goat cheese in microwave-safe bowl; microwave on HIGH 30–45 seconds until softened. Stir to blend, then stir in salsa. Chill 10 minutes.
    2. Cut baguette into 24 (½-inch-thick) slices; toast if desired.
    3. Chop shrimp finely. Spread cheese mixture over bread and top with shrimp. Serve.

Meatball Bundles

Ingredients

  • Cooking spray
  • 1 (8 oz) can refrigerated crescent dough
  • 2 (15 oz) packages fully cooked meatballs in sauce
  • 4 oz fresh mozzarella cheese
  • 12 medium basil leaves

Steps

    1. Preheat oven to 400°F. Coat baking sheet with spray. Unroll dough; divide into triangles, then cut each triangle into 3 lengthwise strips (24 pieces total).
    2. Remove meatballs from sauce (reserve sauce) and cut into quarters. Slice cheese into 24 small pieces; cut basil in half.
    3. Place 1 piece each meatball, cheese, and basil at 1 end of each dough triangle; roll up and place on baking sheet. Repeat with remaining meatballs, cheese, basil, and dough.
    4. Coat bundles with spray. Bake 10–12 minutes until crust is golden and filling is 165°F. Microwave reserved sauce on HIGH 2 minutes or until hot. Serve meatball bundles with sauce on side for dipping.

Asian-Style Pork Won Ton Bites

Ingredients

  • Nonstick aluminum foil
  • ½ lb Deli mojo pork
  • ½ cup sweet chili sauce (+ more, optional for serving)
  • ⅓ cup sliced fresh green onions
  • 1 tablespoon sesame seeds
  • 12 square won ton skins
  • ¼ cup egg substitute
  • Cooking spray

Steps

    1. Preheat oven to 400°F. Line baking sheet with foil. Shred pork, if needed. Combine pork (including onions), sweet chili sauce, green onions, and sesame seeds.
    2. Arrange won ton skins on flat work surface; brush with egg substitute. Place about 2 tablespoons pork mixture in center of each won ton skin. Fold 2 opposite corners together, meeting in the middle, then bring up other 2 corners, pinching to seal together; arrange on baking sheet.
    3. Coat won tons with spray; bake 10–12 minutes until golden and filling is 165°F. Let stand 5 minutes to cool. Serve with extra chili sauce for dipping, if using.
