Pasta Fagiolini and Italian Sausage

Ingredients

  • 1 (12 oz) bag trimmed fresh green beans
  • 8 oz farfalle (or penne) pasta
  • 1 lb mild pork (or chicken) Italian sausages
  • ½ cup julienne-cut, sun-dried tomatoes
  • ½ cup slivered almonds
  • 1 cup Deli shredded Italian blend cheese
  • ⅓ cup lemon vinaigrette

Steps

    1. Bring water to a boil for pasta. Cook green beans following package microwave instructions; let stand 5 minutes to cool, then chop into bite-size pieces. Cook pasta following package instructions; drain, reserving ½ cup pasta cooking water.
    2. Meanwhile, preheat large, nonstick sauté pan on medium-high 2–3 minutes. Remove casings from sausages; place sausages in pan (wash hands). Cook 6–8 minutes, stirring to crumble meat, until no pink remains and sausage is 165°F. Remove from heat and cover.
    3. Add pasta, pasta water, green beans, tomatoes, almonds, cheese, and vinaigrette to pan. Toss to coat; serve.
