    Ingredients

    • 4 yellow squash (about 2 lb)
    • 2 large red bell peppers
    • ¼ cup canola oil
    • 1 teaspoon garlic powder
    • 1 teaspoon onion powder
    • 1 teaspoon kosher salt
    • Fresh thyme (optional)

    Steps

      1. Preheat grill (or grill pan) on medium. Cut squash into ½-inch-thick, diagonal slices. Cut peppers into quarters, discarding stems and cores. Combine all ingredients (except thyme) in large bowl; stir to coat vegetables evenly.
      2. Place peppers on grill; cook 5–6 minutes on each side until tender. Place squash on grill; cook 2–3 minutes on each side until tender. Remove from heat; garnish with fresh thyme, if using. Serve.
