Ingredients
- 4 oz cream cheese, softened
- 4 oz goat cheese (or cream cheese), softened
- 3 tablespoons fresh chives, coarsely chopped
- 1 (8-oz) bag mini sweet peppers, halved
- 4 oz Gouda (or pepper Jack) cheese
- 2 links cured chorizo (about 3 oz)*
- ¼ cup prediced red onions
- ½ cup reduced-fat mayonnaise
- 2 tablespoons chipotle pepper sauce
- *Note: Pepperoni is a good substitute for chorizo.
Steps
- Cut cream cheese and goat cheese into chunks to soften. Chop chives. Halve peppers and shred cheese (about 1 cup).
- Preheat oven to 400°F. Cut chorizo into small chunks and place in food processor bowl; pulse until finely chopped. Add remaining ingredients (except peppers); pulse until blended.
- Spoon cheese mixture (about 1 tablespoon) into each pepper half; place on baking sheet and bake 10–12 minutes or until cheese is hot and bubbly. Serve.
