Food Fundamentals
- As a general rule, breads should be stored at room temperature in their original wrapper. However, breads made without preservatives, like fresh-baked breads from the Publix Bakery, can be stored in the freezer to inhibit mold growth, especially if the weather is hot or humid.
- For longer storage, freeze breads at 0°F. Yeast breads can be safely frozen for six to 12 months. For best flavor and texture, use them within two to three months. To freeze bread, tightly seal it in heavy-duty aluminum foil or freezer bags. Thaw bread at room temperature before unwrapping to keep it from drying out.
- Assemble, wrap and freeze meat and cheese lunchbox sandwiches the night (or week) ahead. Remove the sandwiches from the freezer in the morning to pack them, and they’ll be ready to eat at lunchtime. Pack lettuce, tomato and condiments, such as mustard and mayonnaise, separately to keep bread from getting soggy.
