    • 2 lemons, for juice
    • 1 cup fig preserves
    • 2 teaspoons Dijon mustard
    • ½ cup olive oil
    ...for salad
    • 2 persimmons (or oranges), sliced
    • ½ cup Manchego cheese, cut into small pieces
    • ¼ cup toasted pistachios, coarsely chopped
    • 4 cups bitter greens (such as curly endive, or endive with radicchio)
    • 2 cups mixed sweet apple slices
    • 1 cup seedless red and green grapes

    Steps

      1. Prepare dressing. Squeeze lemons for juice (¼ cup). Combine figs, lemon juice, and Dijon in a medium bowl; whisk until blended. Slowly add olive oil, whisking thoroughly, until incorporated.
      2. Prepare salad. Slice persimmons. Cut cheese into small pieces; chop nuts.
      3. Arrange bitter greens on serving platter; top evenly with persimmons, apples, grapes, cheese, and pistachios. Drizzle with ½ cup dressing. Serve.
