Ingredients
- Nonstick aluminum foil
- 6 medium strawberries
- ½ cup strawberry cream cheese
- 48 vanilla wafer cookies
- ½ cup white (or milk chocolate) morsels
- 1 tablespoon coconut oil
- 2 tablespoons rainbow sprinkles (optional)
Steps
- Line baking sheet with foil. Hull strawberries, then cut into 4 slices each. Spread ½ teaspoon cream cheese on flat side of each cookie. Place 1 strawberry slice on 24 cookies; press together with remaining 24 cookies to form sandwiches.
- Place morsels and coconut oil in microwave-safe bowl; microwave on HIGH 1–2 minutes, stirring every 30 seconds, until melted and smooth. Dip one-half of each cookie sandwich in coating. Arrange on baking sheet and top with sprinkles; chill 5 minutes to set. Serve.
