    Cooking Sequence

    • Prepare salad recipe through step 1; begin to chill pasta (20 minutes)
    • Preheat grill; prepare burgers and begin to grill (10 minutes)
    • Complete salad and burgers; serve (15 minutes)

    Instructions

    Pepper and Onion Cheeseburgers

    Ingredients

    • ½ cup roasted red peppers
    • 2 cups coleslaw mix
    • ¼ cup lemon vinaigrette
    • ½ teaspoon kosher salt
    • 1 ½ lb ground chuck
    • 1 cup shredded cheddar cheese
    • ½ cup crispy fried onions
    • Cooking spray
    • ½ cup sweet and spicy barbecue sauce
    • 4 hamburger buns

    Prep

      Steps

        1. Preheat grill (or grill pan) on medium-high. Chop peppers coarsely. Combine coleslaw mix, vinaigrette, and salt until blended; set aside.
        2. Combine ground chuck, cheese, crispy onions, and peppers until blended. Form into 4 patties (wash hands). Coat patties on both sides with spray; grill 4–5 minutes on each side until grill-marked and 160°F.
        3. Spread 2 tablespoons barbecue sauce on inside of each bun. Place burgers on bottom halves of buns; top each with ½ cup slaw. Complete with top buns; serve.

      Summer Pasta Salad

      Ingredients

      • 1 ripe Hass avocado
      • 1 lb cantaloupe (or honeydew) chunks (about 3 cups)
      • 8 oz rotini pasta
      • ⅓ cup lemon vinaigrette
      • ½ teaspoon kosher salt
      • 0.5 oz fresh basil
      • 2 cups shredded mozzarella cheese

        Steps

          1. Bring water to a boil for pasta. Halve avocado and scoop out flesh; cut melon and avocado into bite-size pieces.
          2. Combine melon, avocado, vinaigrette, and salt in large bowl, stirring gently to coat evenly. Cook and drain pasta following package instructions; chill 5 minutes to cool.
          3. Chop basil coarsely (⅓ cup). Stir pasta and cheese into melon mixture, then sprinkle with basil. Chill until ready to serve. (Makes 6 servings.)

        Serving Suggestions

        • Complete your meal with french fries, fresh salad blend, and apple pie for dessert.
