Ingredients
- 3 medium, ripe pears
- 8 tablespoons unsalted butter, divided
- 1 tablespoon sugar
- 3 cups dry Belgian waffle mix*
- 1 ⅓ cups water
- 2 large eggs (or ½ cup egg substitute)
- 2 teaspoons ground cinnamon, divided
- 1 ½ teaspoons ground ginger
- 2 tablespoons molasses
- Cooking spray
- ½ cup vanilla low-fat Greek yogurt, divided
Steps
- Preheat Belgian waffle iron on medium. Halve pears, remove cores, and slice thinly. Place 2 tablespoons butter in large sauté pan on medium. Add pears and cook 5–6 minutes, stirring occasionally, until softened. Sprinkle pears with sugar; cook 2–3 more minutes until tender and browned. Set aside and cover to keep warm.
- Melt remaining 6 tablespoons butter; place in medium bowl. Stir in waffle mix, water, eggs, 1 ½ teaspoons cinnamon, ginger, and molasses until smooth. Let batter stand 2 minutes. Coat waffle iron with spray. Pour about ⅔ cup batter into iron; cook 3–4 minutes (or following manufacturer's directions) until browned and steaming. Repeat with remaining batter.
- Top each waffle with pears and 1 tablespoon yogurt; sprinkle with cinnamon. Serve.
