Bacon and Herb-Roasted Turkey Breast

Ingredients
  • 4 tablespoons unsalted butter, softened
  • 6 slices precooked bacon
  • 2 teaspoons fresh sage, finely chopped
  • 2 teaspoons fresh thyme, finely chopped
  • 1 teaspoon fresh rosemary, finely chopped
  • Zest of 1 lemon
  • 2 teaspoons kosher salt, divided
  • 2 teaspoons minced garlic
  • 1 teaspoon pepper, divided
  • 1 whole turkey breast (about 5–6 lb)
Steps
  1. Preheat oven to 350°F. Cut butter into small pieces and place in medium bowl to soften. Microwave bacon following package instructions.
  2. Chop sage, and thyme, and rosemary; add to bowl with butter. Zest/grate lemon peel (no white; 1 teaspoon). Chop bacon. Add bacon, lemon zest, 1 teaspoon salt, garlic, and ½ teaspoon pepper to butter; stir until well blended. Place turkey in roasting pan. Loosen skin from turkey breast without totally detaching or tearing skin (creating a pocket). Spread one-half of the butter mixture evenly under skin of each half of the breast (wash hands).
  3. Sprinkle remaining 1 teaspoon salt and ½ teaspoon pepper over outside of turkey. Bake 1 ½–2 hours or until turkey is 165°F. Use a meat thermometer to accurately ensure doneness. Let turkey stand 15 minutes before slicing. Serve.
